Warehouse Tap Room's Focus on Sustainable Food Sources

In 2017, HighRock Group opened a new venture in the restaurant industry, Warehouse Tap Room. With a focus on a casual dining experience, high-quality ingredients, and authentic service, Warehouse Tap Room has completed its first year in business, and looks forward to many more years as a local favorite.

Sourcing from local farms, Warehouse Tap Room is careful to select products that are responsibly grown. Recently, the restaurant has turned to South Mountain Micro Farm for their high-quality products, and ethical practices.

One product that SMMF offers, Tilapia, has developed a bad name in the food world; it’s notoriously raised in dirty and inhumane conditions. However, SMMF takes care to raise their fish properly. The organic fish are raised in an aquaponics eco-system, which keep both their fish and their produce healthy. Because of these practices of properly raising and caring for the farm’s Tilapia, there is no chance of food borne illnesses including Salmonella and E. coli. Their fish are also fed a diet of sustainably sourced grains and plant-based proteins, which are free of antibiotics and hormones.

South Mountain Micro Farm Aquaponics System

Warehouse Tap Room uses South Mountain Micro Farm’s Tilapia in the Beer Battered Tilapia Taco special and other special entrees that feature Tilapia. SMMF’s produce is also grown responsibly and without the use of synthetic chemicals. WTR currently uses their arugula and basil on salads, waffle-wiches, and pizza.
